NO-BAKE BLACKBERRY CHEESECAKE PARFAITS

Ingredients

1 packet Blackberry Cheesecake Dip & Dessert Mix (Retired)
1 brick (250 g) cream cheese, softened
2 cups Cool Whip
2 cups graham crackers, crushed
8 small jars, glasses or dessert dishes

Instructions

Spoon approximately 2 tablespoons of crushed graham crackers into the bottom of each jar. Combine Blackberry Cheesecake Dip & Dessert Mix (Retired) with cream cheese until well blended, then fold in Cool Whip. Spoon cheesecake mixture on top of graham layer, dividing evenly between jars. Top with homemade blackberry compote, pie filling, additional Cool Whip or whipped cream, and fresh blackberries.

Blackberry compote:
2 cups blackberries
3 Tbsp. sugar
2 tsp. lemon juice

In a small saucepan combine 2 cups blackberries, 3 tablespoons sugar, and 2 teaspoons lemon juice. Allow the mixture to sit for about 5 minutes to macerate. Boil over medium heat, stirring frequently. Reduce to low heat and simmer for about 15 minutes, or until the mixture has reduced and thickened slightly. Let cool before adding to cheesecake jars.
